100g mixed peppers
1 tablespoonful of rapeseed oil
40g basmati rice
1 medium leek
120g Fresh Fish (of your choice, remove bones)
One-third jar of Tomato mixed with herbs sauce
Salt and Pepper to taste
Method
Heat the oil in a saucepan and add the peppers which have been de-seeded and chopped, stir-fry for 7-8 minutes
Cook the rice according to the instructions on the pack
Slice the leek into thin round slices and add to the soft pepper and stir-fry for additional 2 minutes
Slice the fish into strips and add to the pan, stirring for another 2 minutes.
Add the sauce and cook through, season with salt and pepper
Serve with rice
